Well, it obviously looks like you're interested in mining. So, get a Retriever and get to it!
The best ore to mine really depends on the state of the market. I ran the numbers back when I was mining (roughly half a million years ago), and the best ore to mine outside of 0.0 space actually turned out to be scordite, due to inflated tritanium and pyerite prices at the time.
Unfortunately, there's no simple way to determine the best ore. You'll just have to check the market prices for minerals and figure out how much each type of ore is worth based on the minerals it will yield.
With your high refining skills, you might also think about offering a reprocessing service to members of your corp, or the general public. They could bring you all their loot they want to reprocess, and you could do it for 5% off the top -- everybody wins.
Another way to exploit your refining skills would be to bypass mining altogether, and place buy orders for the ore itself. Since most people won't have refining skills as good as yours, they'll make a profit selling the ore to you, and then you can refine it and sell the minerals and make a profit for yourself. The advantage of this is that you can do it alongside your mining for extra money.
Also, with your science background, you might want to invest in developing R&D agents. It's a fairly big investment of time and skills, but once it's done you can just sit back and let the research points roll in while you mine. That could also give you a good base for later, if you decide to move into manufacturing.
Well I wanted to venture in the direction of combat as crafting and farming has never really been my thing but I would like to have a method of making money until Loot missions will be making me cash. I remember mining Scordite on my old main but I didn't have refining at the time, I'll do some research into it and see what I can do about loot refining.
